In Türkiye, wild oregano (known as dag kekigi, or mountain thyme) is one of the most essential herbs in the kitchen. Its sharp, appetite-awakening character has anchored Anatolian cooking for centuries. We co-press it fresh from local Turkish producers together with our Yamalak Sarisi olives using the Agrumato method. The oregano is not dried and sprinkled in - it is cold pressed with the olives, becoming a permanent, molecular part of the oil.
