INGREDIENTS
• 2 ripe avocados, peeled, pitted and diced
• 2 green apples, peeled, cored and diced
• 1 red apple, cored and diced
• 1 bunch of scallions, finely chopped
• 1 tablespoon unsalted pumpkin seeds (shelled)
• 3 tablespoons Gaia Oliva EVOO
• 1 tablespoon freshly-squeezed lemon juice
• 1 teaspoon sumac
• salt to taste
For Topping
• 2 tablespoons pomegranate seeds (optional)

DIRECTIONS
For the Salad
• In a large bowl, toss together the avocados, apples, scallions and pumpkin seeds.
• In a container, mix Gaia Oliva EVOO with lemon juice, sumac and salt. Drizzle over the salad as desired.
• Top with pomegranate seeds (if desired)
